Ch-Ch-Ch-Changes!

Happy Spring, all! FINALLY! The birds are singing, the flowers are blooming, and I am sneezing! Haha. I realize it's been a long time since I've updated, but dang it's been busy. My parents came out for my birthday. We had a wonderful time visiting and playing with them and I really wish they could have stayed longer! I'll be honest, I was hoping they would fall in love with Utah's Spring and want to move out here...that definitely didn't happen. Lol.

Aaron is turning me into a sports fan, which is weird and new for me. We went to two Real Salt Lake soccer games (again, thanks Mom and Dad! Best Christmas present ever!), and we've been following the Jazz in the NBA playoffs as well. Aaron has had to do a lot of explaining, but his enthusiasm is definitely catching. :)

Now I'm back at work full time, trying not to let the stress of it kill me...and it does try. Sometimes I wonder how much longer I can hold on, but we're soooo close to paying off our debts. Well, some of them at least. They changed my schedule so that I now have to work every Saturday (which means no Farmer's Market), and I now have Wednesdays off. What did I do yesterday with my first Wednesday off? I took a blanket and a couple books and had myself a good nap in the park. Lol! That could become the new tradition...we'll just see. Hopefully they change me back to M-F. That would be the best thing. I need weekends with my boy!

Aaron is a busy man as always, juggling his supportive husbandly duties, work, Jazz games, and basketball nights with the boys. :) Fun Fact: Aaron got stopped by a rather stern older lady in Wal-Mart who was about to lay into him for wearing a Che Guevara t-shirt when it was in fact his favorite Bob Marley shirt. Once he explained this to her she let him off the hook, but you could tell she still thought he was quite a rebel and troublemaker. Ha!

Well, that was enough for now. I'm making a creamy ginger-carrot soup to take for lunch tomorrow, and it's just about done! Fingers crossed it tastes as yummy as it smells. Love to all our friends and family!!

Chocolate Bunnies and Eggs...

Hot off the GunderPress:

Tomatoes, onions, celery, green pepper, mushrooms, okra, chicken, shrimp and sausage and white rice...Put it all together, let it make a little love...and Voila! Comfort food at it's finest.
That's right, folks, I'm making gumbo! Yummmmm. Smells good so far.

Lots of good times coming up this Spring, and Aaron and I are making some pretty big plans. :D This is an exciting week. Not only is there a Muse concert the day after tomorrow, but Aaron and I get to cash in on his Christmas present from my Mom and Dad and go to a Real Salt Lake soccer game. THEN on Saturday my parents themselves are coming to Utah to visit us! I can't wait....AUGH! So begins the deep cleaning and organizing of our little apartment. :P

Speaking of which, as we were cleaning this morning my suspicions were confirmed when I found the source of my allergy/sinus problems: DUST. It was everywhere. Ugh. I knew it was bad, but I didn't realize it was practically unlivable. Our furnace filter was the worst, but every surface of our home seemed like it had a layer of dirt on it. Even the walls! *Sigh* A good scrubbing of the doors, walls, countertops and vents made me feel like I didn't need a trip to the gym for a while, it was such a good workout. :P I'm wiped out, but after taking some Claritin-D knockoffs and putting myself to bed I'll hopefully be able to discover what it means to breathe clean again.

Well, Aaron just came home from Priesthood session, time to go cuddle and watch a Redbox. :)

Sigh...Just a regular Monday in Customer Service. One of these days I would like to know what it's like to go work and only hear pleasant things from pleasant people! Haha, does that even happen? Still, I'm glad I can come home to lots of hugs and nice words from this hubby of mine...it definitely makes it easier. :)

In awesome news, I am less than three chapters from finishing the fantasy novel I'm reading, and the next one in the Wheel of Time series by Robert Jordan (that I had on hold at the library) is now available! :D Perfect timing...

And, In the End, the Love you Take is Equal to the Love you Make

Well, my dear wife is slaving away to support our family right now at work. There are plenty of productive things I should be doing now; however, I've decided to give our fans a sneak-peak at some of the meals my wife has made in the past few weeks.  She recently won the salsa-making contest at work (those other two entries had nothin' on her), so I feel she deserved a bit of acclaim for her culinary credentials.

The pictures below represent hours of stirring, sifting, measuring, pouring, reducing, chopping, simmering, and finally loving. And, in the end, the love she takes is far less than the love she makes:

On the left we have a picture of Emily's Spicy Gumbo, a recipe she inherited from her mom.  And on the right, a photo of Emily enjoying a waffle that we made in a couples cooking class called, 'You Stir, I'll Pour'. That waffle is topped with some sour cream/maple syrup, whipped cream, and fresas.

Above is Emily's first attempt at Chicken Marsala, made with white wine and lots of shrooms; I must say, its quickly become one of my favorite dinner-time meals! Also on the right, we have - if my recollection is accurate - a baked ziti with garlic bread and minestrone soup? I may not remember quite what it was ...but it was wicked good, Gunderteed. 

Wow, where do I even start here?  Let's switch it up and start with the picture on the right: this was Emily's first homemade batch of bread! She was super proud of her self for having the patience to tenderly knead it and wait while it rose. That loaf and the rolls she made filled our apartment with the warmest, homiest aromas - with just a little bit of butter and pineapple-jalapeño jam spread on top, that bread was MONEY! Up to the left we have some of Emily's soon-to-be-famous turkey meatballs with grilled peppers, onions, and shrooms on a toasted wheat bun. Good. Gravy.


On the left, we went estilo Mexicano for the night - with chicken & mushroom quesadillas, some fresh corn and pepper salad, and some caldito de pollo with orzo, habanero, and lime. The other dish is oriental-inspired: sweet & sour chicken, vegetable stir-fry, fried rice, and egg drop soup... 
Chinese:很好吃
Pinyin:hěnhǎo chī
Literal Meaning:Very Good Eat

Don't tell my heart, my achy breaky heart...

That was one of my FAVORITE songs when I was a kid. I wish I was joking, but I'm not. :P

I'm really missing that sunshine we were teased with. These clouds just make it hard to keep moving. After a long day of work Aaron and I hit up the gym for couple hours. The wet sauna was out of order, which was really a downer, but I tried the stairclimber for the first time and that was the coolest thing! It's like a mini-escalator...you could just keep climbing and climbing forever!! I loved it, but it sort of reminded me of when we had to run stairs in high school as part of the volleyball team. I had flashbacks...brutal.

Right now I'm at home chillin, just finished a good soak and a few chapters and I'm about to go to bed early. I thought about the dishes, but that's about all the attention they got. Lol! Aaron's playing basketball with his buddies in Spanish Fork. I don't know where he finds the energy, but I'm proud of him for sticking with it. Ready for him to come home and cuddle with me, though. :D

I don't have much more to write about so I'm just gonna wrap it up: I love my family, my friends, and my insanely awesome and quirky husband. :) Thanks for stopping by!

Everything will bring a chain of love...

Just sitting here, trying to both finish my talk for tomorrow and also keep myself calm by looking up recipes. I get really really REALLY anxious when it comes to public speaking (yeah, I was a Communication major...so what?), so I'm making sure that I am very prepared. It's funny, Aaron hasn't gotten home yet and he hasn't even started his talk. Haha, I wish I could be as confident as that for something like this.

Today I made lunch, cleaned up a little, and talked to my mom, but other than that it's just been a battle to keep the TV off, facebook closed and my scriptures open...but I really am almost finished. Just wanted to blog a little bit. I'm actually really enjoying this blogging thing, and I'd love to start adding pictures to give it a little more visual interest. Pictures of what, you ask? Why...of my favorite things in the world: Aaron and Food! Haha, shouldn't be difficult.

We have new neighbors upstairs, and we think they host baseball games in their living room. Lots of thumping, running, laughter and cheers from the stands. Either that or a cyber-disco-bowling tournament, with all the loud music coming from the bar/kitchen. And it must be a 24 hour event, whatever it is...*sigh*

I wish I could understand Spanish. Then I would know which team is winning.

Mmmmm...smell that curry!

So on the way home from work today we stopped at the new Bollywood Market on University Ave. If you haven't been there yet (and you're in the Provo area), I highly recommend it. We were able to pick up just a few interesting ingredient packets and VOILA! We now have the aromas of curry, coconut, spinach and cinnamon wafting through our apartment. Oh man...I love this!

Chad and Shannon got us tickets to go with them to the Folk and Bluegrass Festival hosted by BYU for tonight. We're way stoked...I may even whip out the tie-dyed skirt in honor of the occasion. Haha. Any chance we can get to see a concert, we take it, so thanks, Chad and Shannon!

Well, I just wanted to drop that little update and this, besides: Since we started going to the gym and eating healthier (two weeks ago) Aaron has dropped 6 lbs and I have dropped 3! This is definitely motivating us to keep going. Besides, we love to soak in the hottub and "chill" in the sauna after a good workout. Ahhhh, can't get enough of that, really. It's like a date everytime we go to the gym.

Ok, enough for now! Time to go join my baby (singing Zeppelin in falsetto) in the kitchen and get this food on the table! Chow!

The GunderBlog Begins

Well, it was my idea to create the GunderBlog, but I figured my wondrous woman would be doing most the posting.  Yet, here I am trying to conjure up something informative and fun for the reading pleasure of our two daily readers (ourselves). Represent.

Em and I are gettin' awfully close to our 8 month anniversary (29 days away).  I doubt there will be much more celebration than a Redbox and a maybe some take-out Chinese. For our six month anniversary, however, we went and hit up the ol' Red Lobster. There at the RL, we were treated by our friend and esteemed waiter Koontzy to a divine shrimp dinner + free sodas and a massive chocolate cake desert - no, our diet hadn't yet begun. :)

In other news, we are getting pumped for the warm Spring season that approaches.  Thoughts of camping, grillin', and tossing a frisbee have long tortured us as we huddle reclusively in our dark basement apartment.  The day soon comes that we emerge from this abyssal tundra and grasp onto the straws of warmer existence. Oh, and we can't wait for the family reunion in Moab this summer!

Don't get me wrong, life in the dark basement is fun and pleasant: weekend boardgames, spinach dips, guacamole, Mitt Romney, the TV channel that shows people remodeling their houses, and Facebook consume our afternoon/weekend hours. With black mold forcing our scroungy welfare-livin' neighbors to move a few doors down, the arrival a very heavy-footed Latin family in the creaky-floored unit above us, and subtle aromatic hints of the nearby Chinese restaurant sneaking through the non-weatherproof gap in our doorway, things are really looking up!

Hello, I love you. Won't you tell me your name?

So, here we are, blogging like an official couple! Whoa buddy. So this is what happens when you don't have plans on a Saturday and you don't feel like doing laundry. :P Haha...

Facebook is great, but it's just not the format that Aaron and I feel properly represents us, now that we're all married and stuff. But, I've never been a regular blogger before, so the posts done by me might be a little scattered. Just to get started, I guess I'll just give you a run-down of some of our official goals for this year, which will probably be the subject of many posts to come:
  • Losing weight and getting in shape
  • Eating healthier meals and improving our culinary skills
  • Paying off debt and saving for the future
  • Preparing to expand our family!
With so much going on and both of us working full-time jobs, this is bound to be an interesting and busy year! Hopefully this will be a good way for us to stay on track with our goals and update our family and friends in the process. We love you all!
